BEANS! BEANS! BEANS!
This recipe is a spin on a bacon and beans dish that I snagged from my sister-in-law. I mean, who doesn’t love bacon and beans?! They’re delicious and seem to hit the spot every time. I wanted to find a plant-based option in order to change things up every once in a while. So, our veggie bean dish was born, and it’s been a huge hit with the family.

What You'll Need...
3 cans of Navy Beans or Cannellini Beans
Half and onion diced up
5 cloves of minced garlic
1 tablespoon of Vegetable Better than Bouillon
2 cups of vegetable stock
1 tablespoon of garlic powder
1 tablespoon of onion powder
Salt to taste!
* You can absolutely use dry uncanned beans. Navy beans are smaller beans than the Cannellini Beans and in my opinion hold on to flavors better.

This dish is super easy and perfect for busy mommas. First things first, set the stove to LOW temperature. Then pour canned beans into a large pot. You can drain and rinse your beans first if you like. This will create a “looser” less porridge like soup. If you rinse your canned beans, add 1 cup of water to the pot. Toss in diced onion and minced garlic… You can never have enough garlic in my opinion! 😛 Afterwards, pour in 2 cups of vegetable stock. Add 1 tablespoon of garlic powder followed by 1 tablespoon of onion powder. Mix and let this baby simmer. After about 30 minutes, add 2 teaspoons of Vegetable Better than Bouillon and stir. Leave beans to cook down until they achieve your decided thickness. Don’t forget to salt to your liking!

Always remember to set your stove to LOW in case you forget to check on your beans. Garnish your beans with some fresh green herbs like oregano or garlic chives. I opted for the chives from our garden!

In case you were wondering, this dish is amazing when reheated as leftovers! Sometimes when serving these beans to Sammy I’ll toss some frozen spinach into his bowl. It doesn’t really add or take away from the flavor to the flavor of the dish and gives him an extra boost of iron. Enjoy!
